A Unique Starter Developed by Bulgarian Scientists for Long-lasting Bread
Bulgarian scientists have developed a unique starter for sourdough, which can be used to produce bread with an extended shelf life without preservatives.
Not only would this bread be completely natural, but it would also have a softer and more aromatic crumb, a crispier crust, larger volume, and a more pleasant aroma and taste compared to bread made without the addition of sourdough. This was announced by the state dairy processing company “El Bi Bulgaricum” on their website.
The New Type of Starter Dough
A new type of starter dough has been developed to be used with different types of flour – wheat, barley, corn, spelt, and more. Experts have found that bread is a perishable product with a short lifespan, so prolonging its shelf life is of utmost importance. They have concluded that the best approach to preserve bread, while also meeting consumer demand for avoiding chemical preservatives and extending shelf life through the use of natural substances, is by adding sourdough. Sourdough contains a selection of natural yeasts and bacteria that help in fermentation, resulting in a longer-lasting and healthier loaf of bread.
Collaboration
The University of Food Technologies in Plovdiv (UFT) has become a hub for expanding collaboration between university researchers and the El Bi Bulgaricum research center. During the study, a team from UFT, led by Prof. Dr. Zaprana Denkova, isolated bacterial cultures obtained through ionized symbiotic combinations of homo- and heterofermentative lactic acid bacteria and yeasts.
The Pontaneous Fermentation of Various Types of Flour
Researchers have been studying the spontaneous fermentation of different types of flour. In collaboration with researchers from “El Bi Bulgariсum,” a precise species identification of each of the newly isolated strains is carried out. The results of the study show a predominant presence of bacteria such as Lactiplantibacillus plantarum and Levilactobacillus brevis.
Both research teams publish the results of the study in the prestigious international scientific journal Applied Sciences.
