The Black Summer Truffle: Bulgaria’s Treasure
Every year, 20-30 tons of black summer truffles are exported to Italy from Bulgaria. For the past four years, Bulgaria has been leading in the harvest and export of wild truffles. Chef Stanimir Radichev, the first to start processing this precious mushroom in Bulgaria, shared this information with “Telegraph”. He has already created over 50 unique products using truffles. Currently, the purchase prices for summer truffles are around 100 BGN per kilogram. Although the price is determined by size, buyers pay for a mix of truffles with different sizes.
The Hidden World of Truffles in Bulgaria
Plamen Nehrizov, a truffle hunter and highly regarded figure among academics, believes that it is a misconception that truffles only exist in Dobrudja. In fact, truffles can be found everywhere, especially the black summer truffle. This variety is widespread throughout Bulgaria, thriving in the fertile soils of the country’s North – from Vidin, Montana, Vratsa to the seaside. According to Nehrizov, a whole army of truffle hunters sustains themselves by foraging for this valuable mushroom. However, only a few actually process it. The problem lies in the fact that there are unscrupulous individuals who sell truffles illegally, contributing to the decline of this precious resource.
Black Summer Truffles: A Culinary Delicacy
Black summer truffles are now in season, and they are a delicacy that every food enthusiast should try. Known for their firm texture and intense aroma, these truffles are at their peak when the inside structure is visible upon cutting them open. They can last up to two weeks outside of the refrigerator before they start to lose their freshness and become tough.
It’s important to enjoy black summer truffles when they are at their best to fully appreciate their flavor profile. Whether shaved over pasta, risotto, or scrambled eggs, these truffles add a luxurious touch to any dish. So make sure to savor them while they are fresh and at their peak!
Failure
Missed Opportunities for Bulgaria’s Truffle Market
According to Chief Radichev, despite the country being rich in six types of truffles that are highly sought after in the market, the failure of the bill on valuable mushrooms this year only managed to reach the first reading, directly impacting the conservation of the mushroom.
In his opinion, the clauses in the document that required buyers to pay for delivered truffles only to licensed hunters did not sit well with Italian buyers.
As a result, the bill did not progress to the second reading, and tons of valuable Bulgarian truffles were left unsold.
Truffles: A Culinary Delicacy
Truffles are a highly sought-after delicacy in the culinary world, known for their unique and intense flavor. These gourmet mushrooms are often sold at markets under the Italian flag, a symbol of quality and excellence.
French Connoisseurs
Years ago, we tried to sell Bulgarian truffles to the French when they were facing a shortage due to drought. However, they refused, believing that only Italian truffles were of superior quality. Later, when they discovered that Italians were actually selling Bulgarian truffles, they started buying from Bulgarians as well, as Chef Radichev recounted.
Truffle Hunting Myths
Despite legends and myths claiming that wild pigs or large dogs are the best truffle hunters, experience shows that truffle hunting is an art that requires skill and patience. The discovery of a truffle is like finding a hidden gem, as illustrated by the Lagotto Romagnolo dog showcasing its find against a backdrop of sausages.
The Best Hunters for Expensive Mushrooms
Small hunting dogs, specifically trained for hunting small game or truffles, are the most efficient hunters for finding expensive mushrooms. This was revealed by Plamen Nehrizov during a truffle hunt in the Trevnenski Balkan region, in an interview with “Telegraph”. He owns two Lagotto Romagnolo dogs, which are actually Italian water dogs. They are perfect for hunting small game and birds, and respond well to training.
Trained to sniff out the aromatic pillows, they only go where the mushroom has ripened. They don’t stop at the tree if the truffles are still green. When they indicate a find, they wait for their reward.

Cheese and Lukanka: Traditional Bulgarian Delicacies
Cheese and Lukanka are two of the most preferred and sought-after products in Bulgaria. Cheese comes in various varieties such as white brined cheese, small pieces sold in olive oil in elegant jars, and more.
Lukanka
According to chef Stanimir Radichev, white brined cheese and cheese cream are universal appetizers for wines, especially white and rosé. However, the duck meat terrine with truffles reveals its best taste qualities when consumed with red wine. It is interesting to learn that duck meat is sourced only from Sevlievo, where the best quality is guaranteed.
How to Grow Ducks for Meat
